Buffalo Cauliflower Bites
INGREDIENTS:
For dipping sauce:
-1/4 cup nonfat Greek yogurt
-2 tbsp nonfat buttermilk
-1 tsp fresh chives
-1/4 tsp garlic powder
-1/4 tsp dried dill
For Cauliflower Bites:
-1 head cauliflower
-1/2 cup buffalo sauce (I use Wing-Time Buffalo Sauce from Whole Foods)
INSTRUCTIONS:
1. Preheat oven to 425 and prepare dipping sauce.
2. Whisk together cauliflower and buffalo sauce and bake for 25 minutes- tossing halfway through.
3. Take out of the oven and enjoy a low calorie treat that tastes like a cheat!
INGREDIENTS:
- 1 bag ready-made farro
- 1 can garbanzo beans, drained
- 1/2 cup cherry tomatoes, cut in half
- 1/4 cup chopped red onion
- 3 stalks green onion
- 2 lemons
- 1/4 cup olive oil
- 1/2 avocado, cubed
INSTRUCTIONS:
1. Make farro in the microwave.
2. Chop up onions, tomatoes and avocado and set aside.
3. Add remaining ingredients and toss with olive oil and lemon.
4. Refrigerate for at least an hour before serving!
INGREDIENTS:
- 2 packages ground chicken
- 3 zucchinI
- Salt & pepper
- Onion powder
- Garlic powder
- Oregano
- Basil
INSTRUCTIONS:
1. Turn on oven to broil
2. Shred zucchini with cheese grater and mix with the chicken in a large bowl
3. Then add 1 teaspoon of salt, pepper, garlic powder and oregano. Two teaspoons of onion powder and basil
4. Mix all ingredients together and form into patties (you can get 10-12 out of this.)
5. Line a baking sheet with foil and put patties on. Broil for 9 minutes each side!
INGREDIENTS:
- Eggs
- Olive oil
- Onions &veggies
- Muffin tin
INSTRUCTIONS:
1. Preheat oven to 400 degrees
2. Sauté onions and veggies with olive oil
3. Whisk 8 eggs in a bowl
4. Let veggies cool and mix together with eggs
5. Put the mixture in muffin tins
6. Put in the oven for 12-15 min
INGREDIENTS:
- 1/2 cup dry oatmeal
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1/4 tsp baking powder
- 1 banana
- 1 tsp vanilla extract
- 2/3 cup egg whites
- coconut oil
INSTRUCTIONS:
1. Mix all ingredients together in a food processor
2. Heat a pan to med-high heat with a little bit of coconut oil.
3. Scoop out batter in 1/4 scoopfulls on the pan.
4. Cook for about 3 minutes, then flip and cook for another 3 min!
5. Enjoy with sugar-free syrup, fruit or any other topping of choice!
INGREDIENTS:
- Salmon
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
INSTRUCTIONS:
1. Preheat oven to 350
2. Heat a pan to med-high heat with a bit of olive oil
3. Place salmon on the pan and lightly sear for 1 min per side with salt, pepper, garlic powder and onion powder.
4. Place salmon in the oven skin-up and bake for 12 minutes.
